The Drunken Oyster | Our Story
French Quarter spirit, Texas Panhandle soul
Chef Rory Schepisi looked at Amarillo and saw a city that had gone without a real fresh-seafood destination for years. She decided to do something about it — and brought the French Quarter with her.
The gap in Amarillo
Amarillo had steakhouses and BBQ, but nowhere to get oysters flown in fresh daily — so Chef Schepisi built that place herself. Real Cajun seafood, raw bar included, right here in West Texas.
A French Quarter state of mind
Gas lanterns, aged brick, heavy drapes, and a library-laddered bar — the room is designed to feel like the French Quarter in its early days. The Adventurist Magazine called it out specifically: chandeliers, absinthe cocktails, oysters, crawfish, and Cajun seafood.

Amarillo's first Absinthe Bar
Over 300 spirits and traditional French absinthe drip service — the bar is a destination in its own right, unlike anything else in the Texas Panhandle. Stay for the nightcap; the green fairy is waiting.
