Founded in 1718, New Orleans is over 300 years old and is steeped in history, heritage, and unique flavor. Cajuns are the descendants of Acadians and French Catholic colonists who came to New Orleans after they were exiled from Canada by the British. Given this, it makes sense that the backbone of every Cajun dish is a variation the French “mirepoix” – which is chopped onions, celery, carrots. They call it the “Holy Trinity” – onions, celery, bell pepper. The trinity, plus garlic, parsley, and scallions, makes for an authentic Cajun dish. When you see the phrase “Holy Trinity” on our menu, this is what we are referring to.

However, it can (dare we say – is should) be elevated in ways that can further tantalize the five senses. We think of our Cajun menu as the backbone to delivering an amazing dining experience. That’s how we deliver value. We care deeply about quality. We cook with love, we treat our guests as family, and we use our food and service to uplift. You can buy a sandwich anywhere – but you can’t buy our Shrimp Po’ Boy on our fresh baked bread, with our house made spicy remoulade sauce, featuring our freshly caught, perfectly cooked, and expertly seasoned shrimp. (Seriously though… if you love shrimp, this baby is lifechanging.)

Just because we are serving red beans and rice, it doesn’t need to be boring! Our patrons can enjoy amazing Cajun fare and an oyster bar with dishes such as Blacken Catfish, Shrimp and Grits, Jambalaya and Crawfish Etouffee.

And yes, we are serving up some serious fresh seafood in Amarillo to some raving reviews. From our amazing oyster selection to our Seared Mahi Mahi, all of our seafood is fresh caught or harvested and flown in daily. Our Cajun Seafood Boil is a showstopper – your fresh catch is boiled, then tossed with our signature seasoning before being served. It comes with corn, potatoes, catfish, shrimp, calamari, clams, and Andouille sausage and some garlic butter for dipping! Add in your favorite seafood options, such as crawfish, lobster tails, and snow crab legs. You can order it mild or spicy depending on your preference.

On the weekend and special holidays our menu expands to deliver the best brunch in Amarillo. And our brunch is not to be missed.
